Drain on kitchen paper and sprinkle with a little salt. In batches, shallow-fry the savoury cakes for two minutes on each side or until golden and crisp. Step 4 Heat a five millimetre depth of olive oil in a large frying pan.Shape the potato and sprout mixture into 10–-12 patties and lightly coat with the seasoned flour. Tip the flour onto a plate and season with a pinch each of salt and pepper. Season well with salt and pepper to taste.
